Transformation Contestants Simple Eating Rules

We wanted to post an email we got from one of our transformation contestants. As you all know, eating or "diets" can be very hard and challenging. The ironic thing is it really is very simple. See what Courtney has to say below...

"I'm just eating super clean(lean proteins, fruits, vegetables, a small amount of healthy fats like almond butter, avocados and olive oil) and decided to cut out all gluten and dairy products for a little bit and seriously my stomach is thanking me. I'm basically eating 3 meals with 2 to 3 snacks a day, weighing/measuring my food(like 4-5oz protein for meals and 2 oz protein for snacks) and instead of having starch for dinner I'm going with different veggies(I have an amazing cookbook called Clean Start that rocks in the veggie recipe dept.).
I was going to try out the Paleo Diet but after reading it I was like "this is so unrealistic!!" I mean I get what they are talking about but I'm sick of starting crazy diets and totally failing because I feel deprived. So we shall see if this works out or not, it's kind of scary to not be following a "diet" but I think this is going to be better for me in the long run. I'll bring in my food journal tonight and see what you think and if you are curious about any recipes I can totally share with you!!"
